I made some of the best salmon ever using a recipe shared by one of my friends. It was so delicious that I had to share it with you all. Honestly if you can read *and follow directions* you can succeed with this dish! I paired it with some roasted carrots and my own really simple recipe for mashed sweet potatoes.

Honey Garlic Glazed Salmon
You can follow along with this recipe! Be sure to grab all the ingredients below before getting started. I used these exact ingredients and did not sub any part of this recipe except I had 3 pieces of salmon and not 4 but I did end up with a little extra sauce. I listed the ingredients here to make it easier for you but all this information can be found in the recipe.
1/3 cup of honey
1/4 cup soy sauce
2 tbsp. lemon juice
1 tsp. red pepper flakes
3 tbsp. extra-virgin olive oil, divided
4 6-oz. salmon fillets, patted dry with a paper towel
Kosher salt
Freshly ground black pepper
3 cloves garlic, minced
1 lemon, sliced into rounds
Oven Roasted Carrots
You can find the recipe for the most delicious carrots here. I used rainbow carrots but the recipe says you can use what ever kind you prefer.
2 pounds carrots
3 tablespoons extra virgin olive oil
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
Classyfied Sweet Mashed Potatoes
I like to keep my mashed sweet potatoes really simple. I use three ingredients. I think part of the magic is the cutting and boiling. When you dice your potatoes try to keep the pieces around the same size and boil them on medium-high. I add a dash of salt to the water while boiling. To test if they are ready I take a piece out and if it cuts really easy when I put a fork in it then it’s ready. I strain the water off and then mash them with a fork in the pot. Then I add the butter and cinnamon. Voila, the tastiest mashed sweet potatoes!
2 large sweet potatoes
1/2 tablespoon of butter
1/2 tsp (really a dash) of ground cinnamon
